A few updates.... (and boating recipes)

JAN 11/12
We took our great friends Pat and Tutti of S/V Keltic Kat (Nonsuch) out for a trawler day and lunch.  Intention was to head to Peterson Cay but with winds and waves from the east, not so good for us after all. 
Plan B...headed down the entire length of Lucaya Canal.
This is a GREAT option for us to cut through quickly over to the Abacos (in March) as the canal is man-made and dug straight through
Grand Bahama Island, north-to-south. 
VERY shallow north exit and highly recommended to watch your tide tables and go at high tide to be sure you don't ground out. 

CARIBBEAN CABBAGE SALAD
½ head chopped cabbage
4 green onions (or ½ purple onion) chopped

 ¼ cup each: dried cranberries, raisins, sunflower seeds
¼ cup shredded carrots

1 medium apple, chopped
1 pkg Ramen Noodles (your preferred flavour)
1 tin of chicken (Tyson brand)

DRESSING
2 tbsp sugar
3 tbsp vinegar (I use apple cider)
½ cup salad oil
Flavour packet from Ramen Noodles


METHOD
Mix dressing ahead of time, shake, refrigerate.
Combine first SIX ingredients into a salad bowl.
Just before serving, add the chopped apple.
Crumble the Ramen Noodles and add to mixture.
Shake the dressing, pour, toss, serve.
You can also add flaked coconut and mandarins for more colour and flavour.

JANUARY 26
Peter and Hank (the 'go to' lobster hunter!) go off in the dinghy for 3 hours of in the dinghy, out of the dinghy, in the dinghy, out of the dinghy....sight, grab and/or pierce lobsters.....in the dinghy, out of the dinghy...crack off their tales for eating later, before tossing the head section they had to remove one hairy tentacle which is then ceremoniously used to clean the poop out of the lobster. (I new there was a good reason to not like eating lobster!)







JANUARY 30
The usual 'welcome party' and we all get to attend as first timers....week after week.  Dinner, drinks, and dancin.  Here's a regular routine dance I decided to try out this week.  Lots of fun, if not focused on coordination!



JANUARY 31
Aquafit class....starring Penny from S/V High Noon!
Peter set up the bar speakers and blasted out tunes from Abba while the gals all braved the chill of the pool.....warmed up quickly enough with the routine Penny put us through.  We all had a blast......and pina coladas quickly followed for the majority.

TOADS ON THE BEACH?

NOT to be confused with toads ON the beach....
it's a restaurant where 30 boaters went last nite. 
$2 beach bar first to watch the sunset...
(no green flash...too much cloud)
then off to dinner.
Peter enjoyed cracked conch....I whimped out and had the ribs with fried plantain, rice n peas. 
HUGE meals, great food...
but we are finding that almost everything comes 'deep fried' in the Bahamas and
it can be a bit much to digest after 6pm.
